I was looking for a ratatouille recipe for a current health coaching client and couldn’t find the one I invented several years ago. That’s ok. I think this recipe from Good Housekeeping is probably better. It has only 180 calories, and I think it could actually be made even more diet-friendly by eliminating the sugar, or substituting Splenda for the real stuff.
Good Housekeeping Eggplant Ratatouille:
½ cup olive oil
1 large onion, diced
1 garlic clove, cut in half
1 medium eggplant, cut in 1 inch chunks
1 green or red pepper
3 medium zucchini, cut into 1 inch slices
½ cup water
2 tsp salt
1 tsp sugar (or sugar substitute)
2 tsp oregano leaves
2 large tomatoes, in wedges (or stewed tomato)
In 6 quart pan over medium heat cook onion and garlic in the heated olive oil. Cook until tender (10 min.) then discard the garlic.
Add eggplant, green pepper and cook 5 min., stirring frequently. Stir in zucchini, water, salt, oregano, and sugar and heat to boiling. Reduce heat to medium-low and cook 30 minutes stirring occasionally until veggies are tender.
Stir in tomato wedges (or stewed tomatoes) and heat through.
Serve hot, or cover and refrigerate and serve chilled later.
Enjoy!

A creative collection of juicing recipes from award-winning broadcast journalist andbestselling author Gary Null. The Joy of Juicing is an all-new collection of fifty scrumptious and healthy recipes thatutilize juicers for an imaginative array of dishes-from drinks, sauces, dips, and salads tosoups, entrees, and desserts.Juicers are now more popular and affordable than ever, and this new edition will help Null’smillions of fans incorporate power foods into every meal. His versatile recipes frequentlyincorporate juice pulp (often discarded in recipes in other books), which is high in vitamins, minerals, and antioxidants and can be used in many different types of recipes beyond drinks. This book is rounded out by Gary Null’s Seven-Day Menu Plan for a healthier lifestyle, and byhis Natural Living Weight Loss Program. In the seven years since the first edition of The Joy of Juicing was published, America’sconsciousness about the importance of altering the diet to maintain health has beensubstantially expanded. People have become increasingly aware of the importance of live(organic, unprocessed, whole) foods, and many Americans have become vegetarians. They nowunderstand that these foods, with their available enzymes, antioxidants, and phytochemicals, can be the key to slowing down, and in many cases reversing, premature aging and a host ofdiseases such as heart disease, cancer, and arthritis. What’s more, many people now go beyondtaking a simple one-a-day vitamin; they’re now taking additional supplements with an eye tospecific concerns, such as vitamin E for the heart or vitamin C for immune function.During these same seven years, I have conducted more than fifty health support groups reachingnearly 10,000 individuals. After an initial blood chemistry workup and medical evaluation, these people adopted lifestyle and dietary changes for a period of a year to a year and a half.At the end of that period, they were evaluated again, with dramatically improved results.(These

I am about 30 lbs overweight and am looking to lose that weight. I have always been a skinny girl but since college, i have "blossumed" in a non-flowery way! My boyfriend and I cook every night but have run out of ideas for lowfat easy to cook meals for college students to manage ( time, cost of food, understanding of instructions etc..) I started my diet this week and have lost 2 lbs so far but already bored to death with veggies and im in desperate need of CHOCOLATE!
I was wondering if any of you have any advice for quick-er weight loss, food tips, meal ideas, snack ideas, personal experience and so on. Im ready to get this weight off because i cannot see myself in a bathing suite right now.. yucky!
Also, i am an extreme chocoholic and sugar craver, its been HARD giving it up, hard as in to the point of crying! hah.. could anybody make my dreams come true and make chocolate fat free and sugar free? HA!
Thanks for the help! I need all the info i can get!
The secret is acknowledging the true purpose of food as fuel rather than entertainment. Focus on protein, fats, and carbohydrates and learn about each of them. A little bit of research online will teach you a lot. Remember, don't diet; change your eating lifestyle. Doing so will change your life for the better. For the exercise, consider it a priority to include it into your routine.
Anyway, if you want it simple, here it is in ten steps:
1. protein is good…eat plenty (about 30% of your caloric intake)
2. fats are good and bad…know the difference
3. saturated and trans fats are the bad ones – limit these
4. poly- and mono-unsaturated fats are good – don't be afraid of them
5. carbohydrates are good and bad…know the difference
6. fibers and complex carbs are the good ones – eat these (about 40% of your caloric intake)
7. sugars and simple carbs are the bad ones – limit these, particularly late in the day (stay away from sodas and chips!)
8. drink water – lots and lots and lots of water. It's the only drink you need. Anything else is either wasted or simply bad for you
9. Eat 4-6 "meals" a day to boost your metabolism.
10. A meal is defined as a portion of a low-fat, protein rich entree, a portion of veggies for vits/mins, and a portion of complex carbs. (You can get these combined as a health shake)
For exercise, it's even simpler:
1. 4-6 hours per week
2. 45-90 min each day you exercise
3. do aerobic exercise (20-40 min) every day you exercise
4. work abdominals every day you exercise (between sets makes it easy)
5. do chest and triceps exercises on one day
6. do back and biceps exercises on a different day
7. do legs and shoulder exercises on a different day
8. do your exercises in sets (i.e. 3 times with 6-12 repetitions each)
9. keep a record of what you do to measure progress.
10. when your progress stalls (called "plateau"), switch up your routine.

I'm not in bad shape, but lower body needs toned and I just purchased an elliptical trainer. I want eat right but it is so expensive being a vegetarian unless i want salad everyday. Any tips on low cost (i'm a college student) recipes or snacks for an ovo-lacto vegetarians?
It will be well worth it to invest in a variety of dried herbs and spices.
If you cannot affort fresh nuts, buy cheap peanut butter for your proteines. If you cannot affort soya products, but a bottle of soya sauce to spice up your food and get your proteines.
Wholemeal grains are cheaper than wholemeal rice or pastas, and very nutricious. But, all these contain a lot of carbs, so cut down on the portions.
More vegetables. If you buy vegetables that are "in season" , they will be cheaper than those that were flown in.
Fruit for snacks: dry-grilled bananas or apples, boiled bananas with soya sauce, all kinds of fruits spiced up with the herbs.
Buy vegetarian soup cubes to make your own veggie soup, with new experiments (your herbs). Try thick slices of cucumber in your soup, it fills but does not add to your weight.
And best tip of them all: drink a big glass of water before each meal. It will fill your stomac and stop you from eating (too) much.
Not too much salt in your food!
Good luck!

Not only do I not like to cook, but I live alone and am not a very good cook. Also, since I don't like to cook, most recipes are way too involved to make.
Try Weight Watchers. You can buy Lean Cuisine or Weight Watcher meals and just pop them in the microwave. Also, they have a bunch of snacks and desserts.
If you want to spend a lot of money then the Zone diet, will make your meals for you and bring them to your house. It's very expensive though.

I've been diagnosed with PCOS and it's been suggested I follow a low GI diet. Most of the recipes I can find are based around things like tofu and whatnot. I was wondering if anyone has any what I call "real" food recipe ideas or tips for snacks, etc. Thanks
heya honey! i know what its like – isuffer as wel!! i have great drs and now also see a dietician! she told me the best way to do it is to eat a bit of everything – dairy, protien, carbs and fat in small amounts a fewtimes a day. Pulses and things like that are great also quorn my dietician told me was great!
i would like to say something about another answer here – birth control pills have been found to make symptoms worse in a lot of PCOS sufferers i was one of them! u need to find out ur exact hormone levels before that can be an option i was nearly in hosp on mine!
the metformin is also good if u are a larger "cyster" and helps with MANY of the symptoms
i know a great support site great for help and/or research!
www.soulcysters.net
(my name is tinkerbelle84 on it if u wanna talk)

I need meal plans for dieting. Along with the recipes. Even if you gave me a website that has free ones that would be helpful = ) thanks
Try Nutrisystem. They use the glycemic index. I loved it. Just got a little costly at $300 a month for the food. You can sign up on thier website and look on the message boards. There is a guy who posts name the Jazzman who has hundred of recipes that follow the glycemic index but you can do you them at home yourself. There was another girl who post on the message boards daily. The post was called Daily Meals with Pics, or something to that effect. She also does the glycemic index at home on her own. Following it is amazing. I lost 23 lbs in 6 weeks. Good luck to you.

How to make Lentil Walnut Veggie Burgers Video. Veggie Burgers are a nutritional alternative to beef burgers. Many people don’t think of making their own veggie burgers but they are really easy to make at home. Store bought veggie burgers are nutritional but often very high in sodium and preservatives. You can substitute the eggs in this recipe with “flax eggs” which are a mix of 6 tbsp ground flax to 2 tbsp boiling water. The milk in this recipe can be substituted with either soya milk or rice milk. This make the recipe completely vegan!
Lentils are high in fiber which makes them a good protector against bowel cancer. They are an excellent source of protein and are an important source of B vitamins, especially B3, which is essential for both a healthy nervous system and digestive system. They are high in iron, zinc and calcium and are a good replacement for red meat. Like meat, the iron in lentils is better absorbed when they are eaten with a good source of vitamin C like leafy green vegetables.
Walnuts are an excellent source of omega-3 fatty acids, a special type of fat that is essential for our bodies, but that the body cannot produce. Walnuts are also a very good source of monounsaturated fats.
Walnuts contain many powerful antioxidants, including ellagic and gallic acids, pus antioxidant phenols and vitamin E. The minerals copper and manganese are also found in abundance in these tasty nuts.
